Copperhead Lodge

Back from our trip to Georgia on Monday.  Had a wonderful time.  The weather was gorgeous and the cabin was clean & comfortable with lots of cute decorations. Loved it & will share some pictures here with you.

We stayed at Copperhead Lodge in Blairsville, Georgia.

Bears rule in this cabin.  They are everywhere.




Clock in the living room, set of coasters and toilet tissue are all bears.  Thankfully they were not roaming around outside the cabin.

So exciting . . .


Tomorrow (Monday) afternoon, my friend Jane Murphy and I will board the Big Blue Bus to go to a Tampa Bay Rays ballgame.  Jane is bonkers about the Rays so when they announced at Church that the bus was coming and $30 got you a bus ride plus a ticket to the ballgame plus a ball cap, it seemed like too good a deal to pass up.  Jane is thrilled and I'm really excited about going because I have not been to a ball game in many years.  No doubt we'll be like 2 little kids and stuff ourselves with hot dogs, peanuts and popcorn.  Can't wait to sing "Take me out to the Ballgame". hehe!

On Tuesday, it's off to the farm we go!  Andy is planning on leaving for the

Blue Ridge Parkway on Wednesday and Dahli and I are invited to go along. Am I excited? You bet I am.  Haven't been there in a very long time so you know I am packing and am ready to go! Not sure about where we are staying or how long we a staying.  Just along for the ride, I guess!!

Fall Bucket List

Most people think that Florida does not have 4 seasons so I'm here to assure you that we do indeed have changing seasons.  One of these days I'll post a picture of all the leaves in my yard.  hehe! Anyway, here's a perfect example of what I plan to do this Fall.


Another thing I plan to add to my Bucket List is to make Kolachy again this year.  I found the picture and recipe on Andy's Facebook page with the comment; "my Mom used to make these".


Figured I might as well share the recipe in case anyone would like to make them.

Kolacky-Polish Christmas Cookies.Yield: about 2-1/2 dozen cookies

Ingredients:
1/2 cup (1 stick = 4 ounces) butter, softened
4 ounces cream cheese, softened
1 cup all-purpose flour
fruit preserves (raspberry, pineapple, cherry, poppy seed)

Directions:
Beat butter and cream cheese in large bowl with electric mixer at medium speed until smooth and fluffy. Gradually add flour; beat at low speed until mixture forms soft dough. Divide dough ball in half; wrap each half in plastic wrap. Refrigerate 1 hour or until firm.

Preheat oven to 375 degrees F. Roll out dough, half at a time, on floured surface to 1/8-inch thickness. Cut into 2-1/2 inch squares. Spoon 1 tsp. preserves into center of each square. Bring up two opposite corners to center; pinch together tightly to seal. Fold sealed tip to one side; pinch to seal. Place 1-inch apart on ungreased cookie sheets. Bake 10 to 13 minutes or until lightly browned. Remove to wire racks; cool completely. Sprinkle with powdered sugar (optional).

They are dee-lish. Happy baking!

Happy September! Today marks the beginning of the -ber months or should I say brr months.  We celebrate 2 birthdays this month: Matt & Christopher.  It's also the remembrance of 9/11; the saddest day of the month.  Hope yours is a happy one.
